Inscription on ffep Nicolas Soyer, late Chef of Brooks's Club, was the grandson of the great Alexis Soyer. He, like his grandfather, was originally destined for the Church, but left it to serve under Papon, the famous confectioner. On coming to London he worked in various large kitchens before a succession of posts as chef in aristocratic households. This extensive work includes some of the recipes from his successful "Paper-Bag Cookery". Interesting sections on how to make colourings and essences, dishes made with cereals, various fruit beverages and sound advice on coffee and chocolate.
