He, like his grandfather, was originally destined for the Church, but left it to serve under Papon, the famous confectioner. On coming to London he worked in various large kitchens before a succession of posts as chef in aristocratic households. This extensive work includes some of the recipes from his successful "Paper-Bag Cookery". Interesting sections on how to make colourings and essences, dishes made with cereals, various fruit beverages and sound advice on coffee and chocolate.
