some spotting to boards, sl damp marks to right hand edge of page throughout, else good A series of cookery lessons, from cleaning the kitchen range to roasting meat, making soup, cooking fish, vegetables, puddings, baking, with a special section on sick-room cookery. At the rear is information on the School, its regulations, fees etc. This was the alma mater of Harriet Wicken, who taught cookery in Australia and became head of the Sydney Technical College's Cookery School, and many other of her contemporaries.

Front and rear covers lightly rubbed and with several creases. Foxing to outside edge of text block, but otherwise a very clean, secure copy. A considerable influence, probably, on hotel and institutional cooking in NSW. Baked rabbit, curried chops, boiled cabbage, stewed rhubarb and sago custard are typical of its untrendy fare. But there are many oldfashioned pleasures here, too; pea soup, scalloped oysters and queen pudding, for example.
